The scenting of tea leaves with flowers began during the Ming Dynasty in China (1368-1644 CE) and coincided with the advent of techniques for loose leaf tea production. By plucking, withering, rolling, drying, and oxidizing tea leaves instead of compressing them into cakes, tea masters were able to greatly enhanced the flavour of tea. These methods also allowed for a variety of spices, fruits, flowers, and other teas from different regions to be blended in with leaves during manufacturing. The popularity of all thing floral in art and poetry during the Ming dynasty carried over into tea blends by using flowers to flavour tea- particularly jasmine blossoms.
This popularity continues to the present as demand for Jasmine teas remains high not only in China, but around the world. During production, fresh jasmine blossoms are layered with semi-processed tea leaves several times then allowed to co-mingle over the course of many days and sometimes even weeks. Each batch may require up to ten pounds of flowers per one pound of tea leaves, with the highest grades of jasmine teabeing scented as many as nine times over the course of a month.. The result is a slightly sweet, fragrant green tea.
